Thoughts on recipes + Recipe: Cherry Chicken Salad
When I started my blog, I went back and forth on whether or not I wanted to include recipes on here. Many places on the internet have recipes, and I’ve found they are very much rooted in diet culture to where they are “low sugar” or “clean” or dare I say “healthy.” Which is not helpful for anyone, especially those trying to recover from an eating disorder, disordered eating, or adopt intuitive eating. Having these messages in recipes not only interferes with intuition, but creates guilt and shame around food. With this in mind, and by popular demand of the blog's readers I decided my blog *might* be a good place to share some tasty food ideas. Lets keep it positive and delicious!
When it comes to recipes, I also like to keep it simple. I make meals and snacks that are tasty, satisfying, nourishing and, well, easy (because who has time and patience to spend preparing food?)
I have to be honest, I had never tried chicken salad until this year. I was craving something fresh and savory for lunch, because it’s HOT HOT HOT this summer! I decided to do a little research on the realm that is chicken and mayo. I love using ingredients that are in season (hi 1.88/lb cherries at sprouts market) and that have a variety of flavors and textures. The real VIP here is the dill, though.
This is the best cold sandwich filling i’ve ever tasted, so much so that i’ve eaten it every day this week (haha).
Cherry Chicken Salad
12.5oz Can of chicken
1 tbsp mayo
1 tsp honey mustard
2 stalks of celery, finely chopped
10 cherries, cut in halves
1 tbsp dill, finely chopped
Salt and pepper to taste
Mix together in a bowl, and enjoy in a sandwich, on some fancy crackers or however else you desire! You could switch up the cherries with grapes, or add some nuts for a crunch!
